This
sweet is made with ktaif or ktayef, a kind of dough made of thin noodles.
You can find the ktaif mass in the freezers of Alcampo
supermarkets.
Ingredients:
- 100 grams ground pistachios
- 100 grams ground nuts
- 100 g ground almonds
- 75 grams sugar
- ktaifMass
- 200 grams melted butter (approximately)
- 2 tablespoons honey
- A few drops of orange blossom water
- 500 grams sugar
- 300 ml water
- Pistachios for garnish
Preparation:
- We grind nuts and prepare the other ingredients.
- In a bowl mix nuts with 75 grams sugar.
- Add 3 tablespoons melted butter, honey and orange flower water droplets to the mix. Mix well with your hands until you get a mixture with a sandy texture
- Take the Ktaif dough and stretch it on a clean surface.
- Brush with a little butter the upper surface of the dough. We roll the dough with nuts and put on the ktaif.
- Carefully wrap the nuts roll in the dough tightening ktaif well. We split the kounafa into two pieces and we put it in the freezer for 30 minutes.
- Then we paint the entire kounafa with melted butter. Sprinkle the remaining butter on kounafa for it to soak and put it in the oven to 190 degrees.
- While kounafa browns, prepare a syrup with 500 grams of sugar and water. In a saucepan we put 5 tablespoons of sugar and when it starts to get reddish brush it with egg yolk and add the remaining sugar. Before it boils turn off the heat and let it cool in the oven.
- When the kounafa is golden brown remove from the oven and sprinkle with syrup. Leave to cool and harden for 2 hours.
- When we break the crisp sliced and serve decorated with pistachios or other nuts.
